Vegetarian Chili With Chocolate

Vegetarian Chili With Chocolate is easily prepared and the more time you let it simmer the better it gets. Have some bread on the side and enjoy!

Ingredients

  • 2 tablespoons Olive Oil (you can use other plant-oils)
  • 2 Garlic Cloves (finely chopped)
  • 1 Big Onion (finely chopped)
  • 2 Green Bell Pepper (cut in small pieces)
  • 3 cans Tomotoes (small cans - precut)
  • 2 cans Chickpeas
  • 2 cans Kidney Beans
  • 1,2l Vegetable Broth
  • 3 tablespoons Ground Cumin
  • 2 teaspoons Salt
  • 50g Bittersweet Chocolate (grinded)
  • 1 teaspoon Ground Chilli

Note

Equipment:

  • Big cooking pot
  • Cooking spoon
  • Cutting board
  • Knives
  • Can opener

Good to know:

  • To keep this recipe not only vegetarian, but vegan - leave the chocolate on the side and have the option to add it individually. This works for a lactose-free version too!

Left overs:

  • Heat it up again for the next day and the taste will be even better.

Other interesting facts:

The original chili-recipe consisted of dried beef, suet, dried chili peppers and salt, which were pounded together, formed into bricks and left to dry, which could then be boiled in pots on the trail. (http://en.wikipedia.org/wiki/Chili_con_carne)

Directions

Step 1
In a big cooking pot (big), over medium heat, cook the oild, garlic, onion and green pepper until slightly softened, stir occasionally for about 5 minutes
Step 2
Add tomatoes, chickpeas, kidney beans, vegetable broth, cumin, salt. Bring to a boil over high heat.
Step 3
Reduce heat to low, cover the pot, simmer, stirring occasionally until thickened - for about 1 to 1,5 hours
Serving
Step 4
Before serving stir in the chocolate until it is melted
