Pasta, vegetables and lots of cheese - yay to the vegetarian Lasagne!

Ingredients

  • 700g Lasagne Pasta
  • Olive Oil (or any other oil)
  • 5 Onions (midsized)
  • 3 Peppers (green / yellow /red)
  • 5 Zuchini
  • 5 Carrots
  • 2,5kg Tomatoes (or canned tomatoes)
  • 5 Onion-Cloves (finely chopped or pressed)
  • 250ml Tomato-Paste
  • 300g Grated Cheese
  • Seasonings (Salt, Pepper, Oregano, Basil...)

  • Cheese-Grater

Alterations for dietary restrictions:

  • If you want to make this recipe into a Vegan-Lasagne, make sure to check if the pasta is made without egg and use a substitute for the cheese

Good to know:

  • Preparing the Lasagne in advance and letting it "soak" before baking makes it even more delicious!
  • Lasagne originated in Italy, in the region of Emilia-Romagna. Traditional lasagne is made by interleaving layers of pasta with layers of sauce, made with ragù, bechamel, and Parmigiano-Reggiano. In other regions and outside of Italy it is common to find lasagne made with ricotta or mozzarella cheese, tomato sauce, various meats (e.g., ground beef, pork or chicken), miscellaneous vegetables (e.g., spinach, zucchini, mushrooms) and typically flavored with wine, garlic, onion, and oregano. Let overs:

  • left over lasagne can be frozen or used as a snack the next day

Directions

Preparation
Step 1
Preheat the oven to 200C
Step 2
Cut all vegetables in small pieces
Step 3
fry the onions in the pan, don't let them turn brown
Step 4
Add the peppers and fry them for a few seconds
Step 5
Add the zucchini and fry it a little bit too.
Step 6
Add the other vegetables
Step 7
Add the tomato-mark
Step 8
Add garlic, salt and other seasons and let it boil on low heat for about 1 hour
Step 9
cover a baking-tray with olive oil
Step 10
put 1 layer of lasagne-pasta, 1 layer of the sugo and a bit of parmesan-cheese, repeat these layers until all the sugo is used.
Step 11
The last layer should be lots of cheese
Step 12
let it soak for 2 hours
Step 13
bake it for 30 minutes in the oven at 200C - the cheese should be melted and a bit brown
Step 14
Serve it!
